“The last 3 days have been extremely memorable with all amazing member of this team Paradiso , as I met with Chef Hitoshi Sugiura @hitoshisugira , the pioneer of Vegan cuisine in Japan , and Chef Yoshimura @maison_de_froment who is a Master Baker from Gifu, mr Matsuno & Ishibashi from FMI Corporation. This Time in Hita (Oita prefecture) at @lab.3680 togheter we discussed working on several projects and ideas linked to (1) a more sustainable method of food preparation/production, with the use of technology, (such as highly productive machinery), thus decreasing the amount of food waste, and offering chefs more time to create, rather than toil endlessly in the kitchen, and (2) offering a more promising future for the upcoming generation of young chefs. Owing to our diverse backgrounds, know-how and personal expertise, we were able to build upon one another’s ideas, discovering different ways to create new culinary experiences both for professionals, as well as for clients. LAB 3680 is a venue where friends and colleagues can gather to share new ideas, developing trends, as well as technological advancements within the culinary world. Rather than compete, our aim is to cooperate, working to build a more sustainable future in the food industry, as well as to work closely together with local farmers and governments, supporting different regions around Japan. Sustainable cooking at its finest. Saw a Carp head just sitting on ice at the local fish market . It was so fresh, that it was still moving. Rest of the fish was being sold left and right, and it was too big for just two of us.. So, I snagged the head! I have cooked Pigs head for head cheese , but fish heads? Only that Barnes&Barnes song comes to mind; - “Fish heads! Fish heads! Roly poly fish heads! Fish heads! Fish heads! Eat them up! Yum!“… So, after some research, I found a Hunan style chili recipe that has a fish head or two involved. Boom!! Its oh so tender, with gelatinous flesh coming off the bone.. It’s fiery, but tamed by the sweetness of the fish. Love this. People brought food from their own kitchens, and with this uncoordinated pile of ingredients master chef Thomas Aaby Berdal together with the residents created five different servings! 🥦🥦🥦🥒🥬Not only did the surprisingly large portion of broccoli become a delicious and filling soup, but everyone got to polish their cooking abilities and learn to think creatively in a kitchen. And why is that sustainable? The better your cooking abilities are, the easier it is to be creative and reduce food waste (and save money!).
