Good morning guy’s!! I just baked the bread Ciabatta for breakfast with flour Nuvola in Unox oven. Ciabatta in Italian means “Slipper” due to the shape of the bread resembling one. Ciabatta is a white bread that stems from a baker in Rovigo, Veneto, Italy and was invented in 1982 due to an overwhelming affinity towards french baguettes, which had taken Europe by storm. The main difference between these two loaves of bread comes down to the hydration levels, one of the most popular foods that use Ciabatta is Paninis! that’s what i’m preparing this morning for breakfast. Today’s ciabatta is stuffed with fried eggs with bacon and smoked mozzarella and tomato sauce. “The last 3 days have been extremely memorable with all amazing member of this team Paradiso , as I met with Chef Hitoshi Sugiura @hitoshisugira , the pioneer of Vegan cuisine in Japan , and Chef Yoshimura @maison_de_froment who is a Master Baker from Gifu, mr Matsuno & Ishibashi from FMI Corporation. This Time in Hita (Oita prefecture) at @lab.3680 togheter we discussed working on several projects and ideas linked to (1) a more sustainable method of food preparation/production, with the use of technology, (such as highly productive machinery), thus decreasing the amount of food waste, and offering chefs more time to create, rather than toil endlessly in the kitchen, and (2) offering a more promising future for the upcoming generation of young chefs. Owing to our diverse backgrounds, know-how and personal expertise, we were able to build upon one another’s ideas, discovering different ways to create new culinary experiences both for professionals, as well as for clients. LAB 3680 is a venue where friends and colleagues can gather to share new ideas, developing trends, as well as technological advancements within the culinary world. Rather than compete, our aim is to cooperate, working to build a more sustainable future in the food industry, as well as to work closely together with local farmers and governments, supporting different regions around Japan.
