If you have a pound of ham plus potatoes and a few seasonings, you can whip up this brunch classic!

Just finished cycling and yoga while my sweet potatoes were steaming in my instant pot Pro…. They turned out delicious. I added some red grapes, artisan lettuce leaves, tomatoes, some black beans and a little hummus. no oil, no meat , no cheese, not necessary. 

This has been a very wet spring and probably not the best year to try to reorient the garden. I decided I don’t have time to weed so I am laying down sheets of cardboard and dumping used bedding from the barn on top and that gives me a place to walk and kneel without sinking into the soggy ground and just get the sweet potatoes planted!

I dodged raindrops and downpours and slopped boot holes in the mud but I got the dry beans planted, transplanted Utah Tall celery at the end of the Jacob’s Cattle, tucked a few basil transplants in where onions had died, planted 50 ft of Beauregard sweet potatoes and planted some squash and sunflowers in my 3 Sister’s area. I also started a pot of heat-tolerant lettuce over in my container garden and potted up the last few rhubarb babies.

Still going strong on this “untitled” illustration. I’ve been enjoying the process of making this. This one is really special to me(took a lot of inspiration from my family/my black american roots). I’m working on 2 other illustrations at the moment but they are still in the draft/sketch phase. I’ll keep you guys posted on the illustrations and more details.
