Espresso glazed easter buns✨Throwing it all out there with these rolls, a mashup between cinnamon rolls, hot cross buns and coffee #matchmadeinheaven . . . ✨ For the dough: 1 cup lukewarm plant based milk 1 ½-2 cups plain flour ¾ cup spelt flour or whole wheat 1/3 cup maple syrup or agave 1 heaped tsp fast yeast (7-8g) ¼ tsp salt 1 ½ tsp cinnamon powder ½ tsp nutmeg ¼ tsp ginger powder 1 tsp orange zest (optional) ¼ cup melted coconut oil ✨ Easter bun sugar filling: 100g soft butter (around 4 heaped tbsp) or semi melted coconut oil 1/3 cup coconut sugar 1 heaped tbsp hazelnut butter 1 tsp cinnamon ✨ For the espresso glaze: 100g coconut sugar or castor sugar 2 tbsp plant based milk or coconut cream 1 tsp espresso powder diluted with a little bit of boiling water 1 tbsp soft vegan butter or coconut cream 1 tsp vanilla extract (optional) ✨ Method: Start by mixing the lukewarm milk with the yeast and set aside to foam. Sift together the flour, spices, and salt. Once the milk is bubbly, mix with the maple syrup and pour it into the flours. Mix well, add more flour as the dough will be sticky, leave to rise for at least 30-40 minutes or make the night before and place in the fridge covered with plastic wrap and remove an hour to rise before making the buns. Once risen, mix together the filling ingredient. Roll the dough on a floured surface into a long rectangular shape, smear on the filling and roll up into a long sausage. Slice about 5-6 centimeter rolls and place neatly next to each other in a parchment paper-lined baking pan of your preference or in a bread tin. Let them rise for another 15-20 minutes and preheat the oven to 180 degrees Celsius. Bake the buns for 35-40 minutes until golden brown and remove to cool (not completely) before drizzling on the espresso glaze. Being a mother is the most selfless job in the world, surrender and it will be the most enjoyable one too. 2. The self you knew before kids might be lost for a while, but she will be even more fierce once you meet her again. 3. You are BEAUTIFUL even when you feel 100 years old, full of wrinkles, saggy with low self-esteem. Try to see yourself through your kids eyes. 4. This stage of life is hard but it will not last forever, one day you’ll miss these days of no sleep, no personal space and no ”me” time. 5. Pause and hold their hands, laugh at silly jokes and play. Hope you all had a lovely weekend. Apart from being mom there is lot on your plate am I right? #postnatalfitness has and will be a process whether planned or not! One or two babes plus to look after makes the equation of self care a bit mare complicated. After almost three months of breastfeeding, lack of sleep, and somewhat stressful situations I’m back to running. I’m pretty stoked and proud off myself. So far I’ve been doing a 6k run three times a week 🙌🏻 Even though I’m not as on track as I would like to be, (that two-pack will have to wait) I’m just grateful our little girl is a happy camper. Certainly enjoying the baby stage more this time around thanks to more experience, (anyone can relate?) but it makes me sad because I was so obsessed with getting back in shape, I feel as though I missed a lot! ✨ Funny that my plant-based lifestyle has me eating more in abundance with so much more energy. Carbs are LIFE, whereas I never ate any carbs before! Breastfeeding: eating when hungry and going for whole foods as much as possible. Snacking frequently and drinking lots of fluids. I love my tea and coffee, but try to drink cold water with a squeeze of lemon during the day. My milk supply is 🙌🏻 better than the first time around!! ✨ After everyone else, I get to make something for myself (usually in a hurry)and mostly rely on lots of smoothies, baked sweet potato (lots of sweet potato), canned chickpeas & beans, peanut butter banana toasties, avo toast, hummus with carrots and cucumber, vegan patties, falafel, roasted veggies, pre-cooked quinoa and amaranth, oats, stews, soups, frozen veg and an array of fresh veg and fruit that I can just make in a jiffy. ✨ So with all of that being said body positivity and self love is where it all comes down to.
