Baked Salmon
As we enjoy the last few days of our summer season, simple recipes with fresh fish and tomatoes, delicious a this time of the year, are a must! This recipe is really a one pot dish! Serve with an oven baked potato topped with some natural yoghurt and dinner is easy! Serves 2 2 salmon fillets 1-2 cloves of garlic, finely diced 1 tbsp olive oil ½ punnet of cherry tomatoes 1 bunch of asparagus 1 lemon salt and pepper Place salmon fillets in an oven proof dish, combine garlic with olive oil and a squeeze of lemon, sprinkle over fish, scatter tomatoes and asparagus into dish and top with a few lemon slices. Season with salt and freshly ground black pepper as desired. Bake in oven at 180 degrees for around 20 minutes or to your liking. Oven Baked potatoes 2 medium size, skin on Pop your potatoes in the oven earlier than the salmon as they take about 60 minutes. You can speed up this process by cooking in a microwave for 3-4 minutes before placing in the oven (this will halve the cooking time), remember to gently prick the skins a few times with a skewer before cooking. Just place the potatoes on the oven rack so they get a crispy skin.
Peaches that have been caramelized and marinated in pesto are served with grilled chicken that is cooked just right. It’s easy to make and full of flavor, making it great for a quick summer meal. Ingredients: 3 boneless, skinless chicken breasts. ¼ cup pesto sauce. 2 ripe peaches, sliced. Instructions: Warm the grill up to a medium-high level. Cover the chicken breasts with pesto sauce. Chicken should be cooked all the way through after being grilled for 6 to 8 minutes on each side. For the last few minutes of cooking, add the peach slices to the grill. Cook for one to two minutes on each side, until grill marks show up. Take the peaches and chicken off the grill. Put grilled peaches on top of the chicken. Prepare 30 delicious and healthy summer freezer meals in just 3 hours using a pressure cooker. These meals feature a variety of proteins, grains, and vegetables, ensuring a well-balanced and convenient option for busy days. Ingredients: 5 lbs boneless, skinless chicken breasts. 3 lbs beef stew meat. 2 lbs peeled and deveined shrimp. 4 cups quinoa. 6 cups mixed vegetables carrots, broccoli, bell peppers. 3 cups diced tomatoes. 2 cups chicken broth. 1 cup soy sauce. 1 cup olive oil. ½ cup honey. ¼ cup minced garlic. 2 tbsp ginger paste. 2 tbsp chili powder. Salt and pepper to taste. Instructions: Spice up your food with soy sauce, honey, olive oil, ginger paste, minced garlic, and chili powder in a large bowl. Put shrimp, beef stew meat, and chicken breasts into separate bags that can be closed again. Make sure that the marinade covers all of the proteins evenly. Put the meat in the fridge for at least an hour to marinate. Follow the directions on the package to cook the quinoa and then set it aside. Saut mixed vegetables in a pressure cooker until they are just starting to get soft. Put chicken, beef, shrimp, and tomatoes that have been marinated in a pressure cooker. Also add chicken broth and diced tomatoes. Add pepper and salt. Put the lid on the pressure cooker and set it to high pressure for 15 minutes. Let the pressure go out, open the cooker, and add the cooked quinoa. Put the mix into containers that can go in the freezer, let them cool, and then label them with the meal name and the date. Do this again and again until all 30 meals are ready. You can freeze containers for up to three months. Let it thaw overnight in the fridge, then heat it up in the microwave or on the stove until it’s warm. Prep Time: 180 minutes Cook Time: 15 minutes cik audio video
