Salt and pepper to taste. 4 large flour tortillas. 2 cups shredded Monterey Jack cheese. 1 cup diced tomatoes. ¼ cup chopped fresh cilantro. Sour cream, for serving. Guacamole, for serving. Instructions: In a large skillet, heat olive oil over medium-high heat. Season shrimp with chili powder, cumin, salt, and pepper. Cook shrimp in the skillet until pink and cooked through, about 2-3 minutes per side. Remove from skillet and set aside. Place one tortilla in the skillet, sprinkle with cheese, cooked shrimp, tomatoes, and cilantro.
