These Banana Oat Greek Yogurt Muffins are a wholesome and satisfying treat, perfect for breakfast or a snack. They are made with ripe bananas, Greek yogurt, and oats, offering a delightful combination of flavors and textures. Ingredients: 1 cup ripe bananas, mashed. ½ cup Greek yogurt. ¼ cup honey. ¼ cup milk. 1 teaspoon vanilla extract. 1 cup rolled oats. 1 cup all-purpose flour. 1 teaspoon baking powder. ½ teaspoon baking soda. ½ teaspoon salt. ½ teaspoon ground cinnamon. ¼ teaspoon nutmeg. ¼ cup chopped walnuts optional. Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine mashed bananas, Greek yogurt, honey, milk, and vanilla extract. Mix well. In another bowl, whisk together rolled oats, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Slowly add the dry ingredients to the wet ingredients, stirring until just combined. If desired, fold in chopped walnuts. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. True it’s only a penny less, but a penny means a lot when you’re penniless! Getting ready to make tzatziki oats tzatziki oats recipe Ingredients – ¼ cup Greek yogurt – ¼ cup Quick oats – ½ cup minced English cucumber – ¼ teaspoon garlic powder Method Muddle together the garlic powder and cucumber. Ingredients: 2 cups cooked chicken, shredded. ½ cup Greek yogurt. ¼ cup diced red onion. ¼ cup diced cucumber. ¼ cup diced celery. ¼ cup diced red bell pepper. ¼ cup chopped fresh parsley. 2 tablespoons lemon juice. 1 teaspoon Dijon mustard. Salt and pepper to taste. 8 slices whole grain bread. Lettuce leaves, for serving. Sliced tomatoes, for serving. Instructions: Greek yogurt, red onion, cucumber, celery, red bell pepper, parsley, lemon juice, Dijon mustard, salt, and pepper should all be mixed together in a large bowl. Combine well. Toast the slices of whole grain bread until they turn golden brown. One piece of bread should have a lettuce leaf on it. The chicken salad should be spread over the lettuce. Add tomato slices and another slice of bread to make a sandwich. Do it again with the rest of the ingredients to make more sandwiches. You can either serve the sandwiches right away or put them in the fridge and wait to serve them by wrapping them in plastic wrap or parchment paper. These healthy vanilla cupcakes are made with whole wheat flour, almond flour, and Greek yogurt for added nutrition. They’re lightly sweetened with honey or maple syrup and make for a guilt-free treat! Ingredients: 1 cup whole wheat flour. ½ cup almond flour. ½ cup Greek yogurt. 1/3 cup honey or maple syrup. 2 eggs. ¼ cup unsweetened applesauce. ¼ cup almond milk. 1 tsp vanilla extract. ½ tsp baking powder. ¼ tsp baking soda. Pinch of salt. Instructions: Warm the oven up to 350 F 175C and put cupcake liners in a muffin tin. Add the almond flour, baking powder, baking soda, and a pinch of salt to a bowl and mix them together. Add the Greek yogurt, honey or maple syrup, eggs, applesauce, almond milk, and vanilla extract to a different bowl. Use a whisk to mix the ingredients well. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Do not mix too much. Fill each cupcake liner about two thirds of the way to the top with batter. After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After taking the cupcakes out of the oven, let them cool in the muffin tin for a few minutes. Then, move them to a wire rack to cool completely. Once the cupcakes are cool, you can frost them with a healthy frosting of your choice, or you can eat them as they are. Vanilla cupcakes with Greek yogurt are a healthy treat that you can enjoy!
