Fudge Caramels (Needs Candy Thermometer) 2/3 Cup cocoa powder 1 Cup evaporated milk 2 Cups granulated sugar ½ Cup water 1 Cup light corn syrup ¼ Cup butter 1/8 teaspoon salt 1 teaspoon vanilla Combine cocoa powder, sugar, corn syrup, and salt in a heavy 3 quart pot. Stir in evaporated milk and water. Bring to a boil over medium heat, stirring constantly. Once boiling cook until mixture reaches 245 F (Hard Ball) stirring frequently. Remove from heat and stir in butter and vanilla until blended. Pour into a buttered 9 inch square pan.
